Gıda Ürünlerinde Yenilebilir Film ve Kaplama Uygulamaları
Abstract
Yenilebilir film ve kaplama konusu, geleneksel ambalajın aksine biyolojik olarak parçalanabilir ve çevre
kirliliğini azaltmaya katkıda bulunduğu için son yıllarda bilim insanları tarafından dikkat çekmektedir.
Yenilebilir materyal ince tabaka halinde gıda üzerine kaplanabilir veya bir film halinde gıdanın orijinal içeriğini
veya işleme yöntemini değiştirmeden sargı olarak kullanılabilir. Yenilebilir film ve kaplama, gıdaların kalitesini
geliştirmek, mikrobiyal koruma sağlamak, raf ömrünü uzatmak ve ambalaj verimliliğini arttırmak gibi önemli
etkiler göstermektedir. Doğal yollarla gıdaları korumak için artan tüketici talebi, yenilenebilir kaynaklar veya
endüstriyel yan ürünlerden yenilebilir biyopolimer uygulamaları gibi alternatif koruma yöntemlerinin gelişimine
yol açmıştır. Yenilebilir film ve kaplamalar antioksidanlar, antimikrobiyal maddeler, aroma maddeleri ve
biyoaktif bileşikler gibi aktif maddelerin taşıyıcıları olarak görev almaktadır. Yenilebilir kaplamaların
işlevselliği ve performansı polimer ve aktif bileşik arasındaki etkileşime odaklanır. Yenilebilir kaplamaların
formülasyonunu optimize etmek için bu mekanizmaları anlamak önemlidir. Bu nedenle, bu çalışma fonksiyonel
maddelerce zenginleştirilmiş yenilebilir kaplamaların yapı ve işlevselliği ve gıda kalitesi üzerindeki etkisinin
birlikte incelendiği çalışmaları bir bütün halinde sunmayı hedeflemektedir. The issue of edible film and coating has attracted attention by scientists in recent years because it is
biodegradable and contributes to reducing environmental pollution as opposed to traditional packaging. A thin
layer of edible material can be directly coated on food or formed into a film and be used as a food wrap without
changing the original ingredients or the processing method. Edible films and coatings can indicate crucial effects
in improving the overall quality of the food, providing protection to the external microbial contamination,
extending the shelf life of food and possibly improving the efficiency of packing materials. The increasing
consumers demand to preserve food in a natural way has led to the development of alternative preservation
methods, such as the application of edible biopolymers from renewable sources and/or industrial by-products.
Edible films and coatings have also been described to be good carriers of active ingredients such as antioxidants,
flavorings agents, bioactive compounds or antimicrobials. The functionality and performance of edible coatings
focuses on the interaction between the polymer and the active compound. It is important to understand these
mechanisms in order to optimize the formulation of edible coatings. For this reason, this study aims to present a
comprehensive study of the structure and function of edible coatings enriched with functional substances and the
effects on food quality.
